Even though I am a Bible-believing Christian, I'm baffled when I hear my fellow Christians repeat various....?

You are running up against a stone wall of religious indoctrination. Those people cannot allow any possibility that would go against what they have been taught, no matter how much empirical evidence is offered about evolution and no matter how many disciplines or experts support it. They would rather point to the Bible or to the (very) few scientists who do not support it rather than view the evidence with objectivity or trust the overwhelming proportion of scientists who do support evolution.
